A morning person, I am not! But once I'm up, it is my favorite time of day. Just take a look at one of the pictures I took this morning on my Sunrise Snowshoe Tour. The birds were chirping and lots of animal tracks abound.
The historic cycle of the seasons is incredible. It has inspired artists, musicians, writers and chefs for centuries. Spring is my favorite season to be in the kitchen cooking, especially in Vermont at Stowe Mountain Lodge.
“Chicken Fingers, Hot Dogs or Pizza!” Anyone who has kids more than likely has been stricken with these choices or nothing at all (except a temper tantrum). The choice of meals prepared for children has become more and more of a challenge lately.
When my daughter was born I made it my mission to make her baby food. I tried all kinds of combinations: trout, barley, apples, chicken, carrots and sweet potatos were the favorites. Salmon, broccoli and rice - not so much. She and I made it through the “baby food” years and then progressed to cutting small bites of food that my wife and I were eating for dinner. I am proud to say that my seven year old daughter has a more sophisticated palate than I did in my teens!
With our winter operations in full swing and spring skiing on its way, it is always nice to take a step back and appreciate this amazing environment I am fortunate to live and work in. The wonder that is Mt. Mansfield stands watch over my “office," and I am humbly reminded on a daily basis how lucky I am to be here at Stowe Mountain Resort and Stowe Mountain Lodge.
