 Stowe, VT  The chefs of the Destination Hotels Culinary Collection have created The Study of… Culinary Series, and throughout the year will unveil a new gastronomic topic for their chefs to examine through cooking demonstrations, educational lectures, innovative recipes and sumptuous tastings. 

After the first venture into The Study Of Salmon this past spring, this summer, duck is the featured ingredient, with many innovative recipes on Solstice's current seasonal menu.  

 Salmon fishing as a child with his dad in Maine, Chef Berry can remember, “hooking a 15-pound Atlantic salmon that, as far as I can remember was as big as me.” That experience informs his proficiency in cooking the “King of Fish”, the first ingredient highlighted in The Study of…Culinary Series.
