Summer Treats from Stowe Mountain Lodge Chef Cody Vasek

Summer brings a whole new set of flavors…as does Chef Cody Vasek – fresh, bright aromas and cool temperatures.  Chef Cody of Solstice is embracing this season’s palette with some tasty treats. 

First up, a light crab salad.  Cool and refreshing  for the summer in Stowe with creamy avocado, yuzu creme fraiche, and a little local honey to enhance the sweetness.  It wouldn’t be a crab salad without the crab so Chef uses Jonah crab meat and tops it off with sorrel. 

For a little something different but equally as delicious, you have to try Chef’s sweet and savory Pork and Bean Ice Cream Sandwich.  With his roots based in the south, he brings those flavors to New England in this unconventional but increasingly popular dessert.  His award-winning creation features a gingerbread sandwich and the surprising smooth pork and bean ice cream that is delighting the young and young at heart alike.

Be sure to visit Chef at the Taste of Stowe Arts Festival July 31 where he will be serving both dishes or dine with us in Solstice or Hourglass.
