What do I love about being the lead pastry chef at the Stowe Mountain Lodge Bakeshop? Coming up with an idea, executing that idea while continuously thinking of different ways to do it, and ending up with a product that was so much better than the idea I originally thought of. So here's what I have been working on as of late that holds that to be true for summer...
Everybody Loves S'mores, right?!
If I had to think of a dessert that tasted like summer, that dessert would definitely be s'mores. One of my favorite memories during summers as a child was waking up and going to the ice rink for figure skating in the morning, hanging out at the pool with my best friends in the afternoon, and going over to one of our houses to make s'mores by a bonfire in the evening.
Bonfires are part of summer in New England, and they just wouldn't be the same without s'mores.
How do I spend my summers now? Having fun coming up with new ideas in the Stowe Mountain Lodge Bakeshop, some of which include experimenting with different ways to turn that summer s'mores flavor into different desserts:
S’mores Panna Cotta – An Italian Custard dessert with an American twist. Chocolate marshmallow Panna Cotta with a house-made marshmallow on top, sandwiched in between graham sable cookies. Served with chocolate sauce, and marshmallow Crème Anglaise.
S’mores Cupcake – Rich, chocolate cupcakes baked on a graham cracker crust. Filled with marshmallow filling and topped with vanilla frosting.
S’mores Cookie – Stowe Mountain Lodge's delicious graham cracker cookie baked with Hershey’s chocolate. Finished off with a marshmallow that gets torched for the classic S’mores effect.
Gabi Hatch is the Lead Pastry Chef for Stowe Mountain Lodge, which includes the amazing dessert menu at Solstice. She also won First Prize last winter at Stowe Mountain Resorts' ice carving competition.
