Christmas Cookies, Winter Desserts and Holiday Cheer in Stowe,Vermontphoto

Christmas is the time for families to be together, celebrate having loved ones in our lives and for eating lots of delicious treats.  One of those ways that families spend their time together over the holiday season is making Christmas cookies.

 

Personally, I’ve found that there are some good Christmas cookies out there, and some that just don’t taste that great.  I strive to make the ones that taste great at all cost! I am a pastry chef, afterall!  

But part of the fun in families making them, even if they don’t always taste as good as a nice chewy chocolate chip cookie, is decorating them and making them look pretty.

 I sometimes find a personal irony in Christmas cookies because since I was a child, my mom was always in the kitchen baking; even more so around Christmas time making dozens of cookies all shapes, colors and sizes.  My favorite was a cookie that had mini Hershey’s kisses baked into the dough and enclosed a gigantic Hershey’s kiss in the center.  Delicious. I didn’t always share that same love of baking.  My mother always used to try to get me to help make Christmas cookies in the kitchen and I would somehow find something else I needed to do instead (mostly eating said cookies). 

 Now, since I’ve given baking a good chance and have made it my profession and passion, I spend my days baking and enjoying every minute of it.  Now and then I think back to when I was a kid and avoided baking at all costs, and I have to laugh a little. 

Christmas cookies aside, I love to have a peppermint dessert on the winter menu at Stowe Mountain Lodge.  Peppermint speaks winter to me, and is just a great refreshing flavor to have after a day on the slopes.  Having the Peppermint Cheesecake on our new dessert menu and ordering a nice hot cocoa to accompany it speaks perfection to an end of a winter day. We hope you enjoy tasting it as much as we enjoy making it

 My Mom's Hershey Kiss Christmas Cookie Recipe

11 oz. bag of Hershey Kisses

1 C. butter, softened

1/3 C. granulated sugar

1/3 C. brown sugan

1 t. vanilla

2 C. flour

1 C. mini semi-sweet chocolate chips

In a large mixing bowl, beat butter, sugars and vanilla till well blended. Add flour and mix till smooth. Stir in mini chips. Mold a scant tablespoon of dough around each (unwrapped!) Kiss, covering completely. Shape into balls. Place on ungreased cookie sheet and bake at 375 degrees for 10-12 minutes or until set.  Cool slightly and then remove from cookie sheet. Eat many!
